Buy crypto in Europe anonymously

Hi, I always wanted wanted to buy crypto but I dont want to make the goverment know that i have crypto or that i bought some. So anyone can give me ways to buy crypto with cash or something that makes the goverment not know?, Also where i could sell the crypto

P.D: I will not use the crypto for ilicit activities on the internet, i just have the right of being anonymous with my purchases without making the goverment know that i have crypto, im an good civilian of my country but i also have the right of privacy.
