How do I use the Ethereum blockchain for my own projects?
I’m quite possibly misinformed, but can I use the Ethereum blockchain as a template which I can modify for my own projects that doesn’t depend on/communicate with the real Ethereum blockchain?

Sure you could fork Ethereum if you wanted to. Depending on what you are wanting to do this might not make any sense. For most use cases forking ETH is not going to be what you want to do.
