What is the most anonymous way to send crypto from an iPhone in the UK? Something that is secure as well.

I thought sending money/payment via crypto was supposed to be really anonymous and secure but when signing up to apps like CoinBase there’s tonnes and tonnes of identity checks. Is there not a more anonymous way?
